COURSES' TERMS & CONDITIONS as from 2016/2017 onwards

(please read the following terms & conditions before you reserve your place in class)


BOOKING SYSTEM

a) Students are to pay a deposit of €20 to reserve their place in class, if they are booking months ahead from the starting date of the course. This can be done by cheque addressed to Maryann Zahra, 105 Eden Flats, Artistic Cakes Studio, Triq l-Izbark tat-Torok, Birzebbugia, or by debit card, credit card or paypal on line. Students paying in cash can pay at our shop Cakecraft, Triq il-Barrieri, Mellieha.

b) Students are to pay the FULL amount of the course 3 weeks prior starting date of the course.  This can be done by cheque addressed to Maryann Zahra, 105 Eden Flats, Artistic Cake Studio, Triq l-Izbark tat-Torok, Birzebbugia, or by debit card, credit card or paypal on line. Students paying in cash can pay at our shop Cakecraft, Triq il-Barrieri, Mellieha.

c)  PLEASE NOTE THAT YOUR PLACE WILL NOT BE FINALLY CONFIRMED UNTIL FULL PAYMENT IS RECEIVED 3 WEEKS BEFORE STARTING DATE OF THE COURSE.  In the event that a student is booking late, just 3 weeks before starting date of the course, the student has to pay the FULL AMOUNT of the course that is both the deposit amount and the Final Settlement amount.


CANCELLATION POLICY

Artistic Cakes Malta reserves the right to cancel or change a course.  We regret that we are unable to offer refund in the following circumstances:

i) if a student doesn't do the full payment 3 weeks before starting date, no refund of the €20 deposit will be executed. The student will loose his/her place in class.

ii) If a student cancels the course in the last week after paying the full amount, no refund will be issued unless ARTISTIC CAKES MALTA resells the class place again,  as we still have to pay for the operating expenses.


In the unlikely event that ARTISTIC CAKES MALTA cancels a course and no alternative date is offered, the deposit or the full course refund (whatever applies) when the decision is taken that the course is not being held, will be given to the students.





Sugar Craft Introductory Course  (Beginner's Level)

This course is aimed for the very beginners or those who feel that they want more practise in the basic foundations of this craft.

5 lessons of 1.5 hrs each- Price €95 (does not include tools but includes certain basic materials and ingredients which will be used during recipes as we go along).


Full payment is due a week before commencement of the course, however a deposit of €20 should be done to reserve your place in class.  The deposit can be settled through paypal or by sending a cheque to Maryann Zahra.


We regret that we are unable to offer refunds in certain circumstances; if the student decide to stop attending the course, we still have to pay for the operating and preparation expenses.  In the unlikely event that the tutor is unable to teach the class due to unforeseen circumstances we reserve the right to substitute the tutor with another appropriate tutor.  If we cancel a course and no alternative date is offered, a full course refund will be given.

Course Details

Students will be practising how to cover a cake on a dummy cake. This to avoid messes and danger in the kitchen. However, the instructor demonstration will be done on a real cake.  After the demonstration, we are sure that the student is confident and have knowledge how to cut a real cake in layers.  Besides students will be taught basic cake decorations.


Week 1:

A look at the basic equipment and tools, sizes of cakes and basic techniques of how to prepare a sponge cake - layering it, filling it and crumb coating it.  How to cover the cake with sugar paste and how to cover a cake board.

Week 2:

Using food colourings and other pastes to work with.  Start decorating your cake with types of frills.

Week 3:

Introduction to simple sugar models, starting with simple basic animals.

Week 4:

How to do a cradle on a christening cake. Finishing the cradle and decorating it.  Students will model a sleeping baby covered with a blanket.

Week 5:

Learn to cover a cake in patterns – applied technique and inlay technique.

Sugar Art Season's Greetings Course (Beginner's Level)

This course is aimed, for those who are beginners, for those who went through the introductory course or those who have knowledge of this craft and would like to learn sugar art Christmas Decor.  Students will learn initially how to cover a Christmas cake which is completely different from how to cover a sponge cake, and then students will learn various Christmas sugar art decorations.


6 lessons of 1.5 hrs each- Price €120 (does not include tools but includes certain basic materials and ingredients which will be used during recipes as we go along).


Payment is due a week before commencement of the course, however a deposit of €20 should be done to reserve your place in class.  The deposit and final settlement can be settled through paypal or by sending a cheque to Maryann Zahra.

How to prepare the Christmas cake for covering and how to cover it with marzipan and sugarpaste.  How to cover the board.

Week 2:

Christmas patchworking Designs

Week 3:

Poinsettia Flower – an astounding flower on Christmas Cakes

Week 4:

The Christmas Garland, with simple poinsettias, ivy leaves and Christmas flowers

Week 5:

A taste of royal icing, creating Christmas Decorations with royal icing.

Week 6:

Stenciling Techniques – using Christmas stencilling, however same technique can be applied on other stencils which can be used for other occasional cakes.

Figolli Decorations Course (All levels)


This course is designed for those who are interested in designing a figolla in the right way.  During this course you will learn designing both with sugarpaste and Royal Icing. Both techniques will be combined together to create amazing designs.

2 sessions of 2 hours each - Price €40 (does not include tools but includes certain basic materials and ingredients which will be used during recipes as we go along).

Week 1:  Students are to bring with them a figolla of their desired shape.  The figolla should be baked and cooled ready for decorations.  We start by practicing some royal icing techniques which we will be using on the figolla.  Then we start building the figolla decorations step by step starting with the sugarpaste as background and then further designs are built from there on.


Week 2:  Students are to bring with them a round shaped figolla, baked and cooled ready for decorations.  This is a different technique than the usual designs of the figolli.  On this round figolla we are going to build up an Easter scene.  We start with sugar paste as background then we built everything with Royal Icing.


Great fun course with hands on practice during class.

Sugar Art Flowers Course (Intermediate Level)

This course is aimed for those who went through the introductory course or those who have knowledge of this craft and would like to learn sugar art flowers.  Students will start from the common and basic sugar flowers up to a bit more complicated flowers.

6 lessons of 1.5 hrs each- Price €120 (does not include tools but includes certain basic materials and ingredients which will be used during recipes as we go along).

Course Details

Students will be practising sugar art flowers.  This course has hands on practice in class. However, since some flowers are more intrinsic than others, hence the demonstration will be long, students should practice at home and bring flowers with them for the instructor to analyse where students need to improve.


Week 1:

Rose buds, also known as quick roses and first step of the carnation flower.

Week 2:

Conclude work on the carnation flower with calyx and start work on the wired roses.

Week 3:

Continue work on the wired roses, we go in detail how to do the petals depending on the next layer of petals and calyx.  The calla lily flower- a simple and gorgeous flower.

Week 4:

The cymbidium orchids – the labellum, sepals and petals.  The students will get to know more about the different kind of orchids.

Week 5:

Stephanotis and Daisy Flowers as fillers.  The fuchsia flower.

Week 6:

The longiflorum lily and how to wire a spray of flowers.

This course is aimed for those who went through the introductory course or those who have knowledge of this craft and would like to learn sugar art modelling figurines.  Students will learn how to use the people moulds, how to do free hand modelling, modelling figurines on pattern and also different face expressions.

Students will be practising sugar modelling figurines.  This course has hands on practice in class.

Week 1:

Introduction to the modelling paste recipe and the ready-made modelling paste.  Students start modelling with the people moulds.

Week 2:

Working a model on a pattern.  Students will start working on a model as per pattern chosen by instructor.  Faces and expressions, arms techniques, legs and body shaping.

Week 3:

Continue work on the model pattern.

Royal Icing Course (Intermediate Level)

This course is aimed for those who already do some sugar artistry and would like to learn the techniques of Royal Icing.

Course Details

On the first lesson the instructor will demonstrate how to cover a dummy cake with Royal Icing.  Since the demonstration is quite long and a royal iced cake cannot be covered at one go, the students are asked to be attentive watching the techniques and then they should practise covering a cake with Royal Icing at home.  The students have to bring their ready iced cake then in Lesson 4.  Hence, they would have had enough time to practise at home.

Week 1:

A look at the equipment and edibles to start Royal Icing, the Royal Icing recipe and types of royal icing.  How to cover a cake with Royal Icing.

Week 2:

Making your own piping bags, colouring royal icing and starting pressure piping with basic natural shapes and floral designs.

Week 3:

Learning basic drop line work, building line work.  Learning scratched scrolls with S and C scrolls, basic rope and barrel scroll.

Week 4:

Students to bring their royal iced cake, to practise the scrolls on it.  Overpiping the scrolls and the pull up pear shape scroll.

Week 5:

Pressure piping plaques or motifs and letterings and numerals.

Week 6:

Embroidery technique and piping easy royal icing flowers on the board and on the nail.

Course Details

The art of airbrushing in culinary is producing stunning projects in the cake industry.  This course is designed for advanced students to not to be afraid of using such tool and instead they will be taught techniques to produce new effects on cakes in order to achieve superb results.  The students will be encouraged to experiment and be creative.  This course will show you everything you need to get started using the airbrushing equipment besides the techniques and new ideas.  You will realize how faster you will go in your projects by airbrushing rather than mixing colours with paste.

Session 1:


    • Introduction to airbrushing, we will see the selection of airbrushing that are on the market, what kind of airbrushing we will be using.  Learning the selection of different equipment according to the different applications. 
    • The entry level equipment of Dinkly Doodle – how to assemble it.  We will discuss the work space environment, ie airspace, air ventilation and safety equipment.
    • How an airbrush works
    • What colours to use according to your airbrush equipment.
    • Handling the airbrush and learning the distances to use and angles.
    • Colour changing technique.
    • How to clean the airbrush

 

Session 2:


    • Start using the equipment by spraying stencils
    • Spraying techniques done with ‘found objects’
    • Spraying laces and fabrics
    • Colouring flowers by building layers
    • Creating a picture on the cake

Do you need to be an artist to start hand-painting cakes?  No, definitely not.  There is a technique about hand-painting on cakes and everyone can become an artist.  Obviously, those that have drawing and artistic techniques in their blood stream will find it easier and they can even draw freehand on their cakes.


This course will give you confidence that also YOU CAN DO hand-painting.  Each student will work on the project in class step by step together with the tutor.  The student will go home with a finished hand-painted design on the cake.

 Session 3:
